Why Purslane?

Purslane is packed with omega-3 fatty acids, vitamins A, C, and E, as well as minerals like magnesium, calcium, and potassium. Not only is it nutritious, but it also has a slightly tangy, lemony flavor and a crisp texture, making it a delightful addition to various dishes. The best part is that it’s incredibly easy to grow and can often be found in gardens and markets.

To create a delicious Turkish-inspired purslane dish, you’ll need:

2 cups of fresh purslane leaves and tender stems
1 large onion, finely chopped
2 cloves of garlic, minced
2 medium tomatoes, diced
1 tablespoon of olive oil
1 teaspoon of paprika
Salt and pepper to taste
Lemon juice (optional)
Prepare the Purslane: Start by rinsing the purslane thoroughly to remove any dirt or grit. Trim any tough stems, but keep the tender leaves and stems.

Sauté the Onion and Garlic: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté them until they become soft and fragrant.

Add the Tomatoes: Stir in the diced tomatoes, and cook them until they start to break down and form a sauce, usually around 5-7 minutes.

Cook the Purslane: Add the purslane to the skillet, and mix it well with the tomato mixture. Sprinkle in the paprika, salt, and pepper. Cook everything for about 5 minutes, or until the purslane is tender but still slightly crisp.

Finish with Lemon Juice: For an extra burst of flavor, squeeze a bit of lemon juice over the dish just before serving.
